These characteristics come from our 100% Iberian breed pigs, raised freely in the dehesas of the Valle de los Pedroches – a unique environment in the world – and fed with herbs and acorns during the Montanera. This magical period, between November and February, coincides with the final phase of feeding our animals, where ripe acorns are responsible for imparting all the organoleptic and health benefits to the meat.
This cut is located at the bottom of the jaw. It stands out for its exceptional flavor and especially smooth and tender texture, making it one of the most sought-after cuts of Iberian pig in recent years.
